Problem with the reboot command

Great tutorials Jack!

I have installed kali linux on a USB stick with a second partition called persistence.

I go into kali linux with persistence, create the appropriate persistence.conf file, enter settings for screen resolution, wifi, etc. This all works for the current session.

Then I issue a reboot command, which promptly closes kali linux and brings the laptop back to its boot menu. I go into its setup and see that the laptop's time and date have been clobbered with spurious hex values. Once back into kali linux persistence, I see that the persistence.conf file is gone as well.

Is there a kali linux config command that can prevent the reboot command from losing the laptop's time and date and the rest of my session's settings?
